This is a home made Fruit cake recipe that can be easily prepared. Fruit cakes are dense cakes with lots of dry fruits in it. Fruit cake can be served with evening tea or also with a scoop of vanilla ice cream as desert. Children will love this fruit cake
- 1 1/2 cups refined flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon powder
- 120 grams butter
- 2 2/3 tablespoon sugar
- 1 teaspoon orange zest
- 1/4 cup orange juice
- 1/2 cup raisins
- 1/2 cup currants
- 50 grams glazed cherries, chopped
- 1 tablespoon orange marmalade
- 2 eggs whisked
Preheat the oven to 170 c/325 f/gas mark 3. grease an eight-inch round cake tin
Sift together the flour,baking powder, salt and cinnamon powder into a large bowl. place the butter, sugar, orange zest, orange juice and two-third cup of water into a pan. cook over low heat until the mixture is smooth.
Stir in the raisins and currants and continue to simmer for another five minutes.
Cool, pour the butter mixture into the sifted flour and mix well.
Mix in the glazed cherries, orange marmalade and eggs.
Pour the batter into the greased tin and bake for one-and-a-half hours till a tooth pick inserted into the center comes out clean. cool the cake in the tin
