Kaju Khumb Makhana is a rich and healthy dish. Makhana are puffed lotus seeds. They have medicinal properties and are beneficial in cardiovascular diseases, improve blood circulation and post natal care. Makhana are rich in protein and can be given to growing children.
Ingredients
Remove the stalks of the mushrooms, clean and boil until three-fourth cooked. Drain and set aside. Heat the oil in a non-stick kadai and stir fry the puffed lotus seeds for half a minute. Drain and soak in a bowl of water. Place the yoghurt in a bowl and whisk with the coriander, chilli and turmeric powders. Heat the ghee in another non-stick pan, add the cumin seeds and when they begin to change colour add the onions and sauté until translucent. Add the ginger paste and garlic paste and sauté for five minutes. Add the pepper powder and sauté for two minutes. Add the mushrooms and continue to sauté for five minutes. Add the yoghurt mixture and cook till the oil rises to the surface. Add the tomato puree and salt and sauté till the oil rises to the surface again. Add two and half cup of water and bring to a boil, reduce heat and add the cashew nuts and puffed lotus seeds. Cover and simmer, stirring occasionely, for eight to ten minutes. Sprinkle the garam masala powder and mix. Add the honey and lemon juice and mix well. Sprinkle fresh coriander. it can be served with chapati or rice.
